Introduction

Our laboratory has focused efforts on microorganisms associated with food with special emphasis on Food Safety. We studied the interaction of these microorganisms with the environment and the impact of these interactions on growth, survival, development and virulence. Our work can be grouped into one or more of three main projects including aflatoxin/mycotoxin synthesis, aflatoxin remediation, and genetic variation in Campylobacter.
